    Whole, Raw Milk from Pasture-Fed Cows: Nature's Healing Food - by Sally Fallon Morell, M.A.
    In this science based presentation, Sally Fallon Morell details the earliest published research on the multiple health benefits of raw milk, and other studies that validate the body building power of unprocessed dairy foods, up to the present day. Morell shares the results of human studies done in Boston, Scotland, Great Britain, and research on rats Ohio. Studies on rats reveal a dramatic contrast between healthy, happy rats fed with unprocessed (raw) milk and anemic, ill-tempered rats fed pasteurized. Rat studies also show a decline in fertility of those fed heat processed milk. Both human and animal trials give us convincing proof that science does affirm the immune boosting power of Mother Nature's superfood. Opponents to raw dairy always say, "there is no science to support it". Sally Fallon Morell completely answers that objection on this riveting lecture.


    Those Pathogens: What You Should Know - by Ted Beals, M.S., M.D.

    Discussion of food, including raw milk, should focus on the undeniable values and benefits for our development and sustained health and not the statistically improbable risks ascribed to eating nutritious food. However, this lecture presents the scientific facts and reported risks attributed to the consumption of raw milk. We will look at the four bacteria that are the focus of those who want us to believe that fresh milk is unsafe: Campylobacter jejuni, E. coli O157:H7, Listeria monocytogenes and Salmonella spp. For each we will document: Where do they like to grow? What are the most common sources? What are the most common reservoirs? What are the factors that increase and factors that decrease potential risk to raw milk drinkers? And most importantly, what are the actual overall human public health data and the specific public health impact from each pathogen?


    The Shift Is Coming: Back to High Fat - by Alan Watson

    Fifty years of ever-increasing obesity and chronic illness cases indicate that a low-fat diet based on processed vegetable oils does not promote good health. The switch from a more traditional diet to the low-fat diet began in 1961 when Ancel Keys, the father of the low-fat diet, convinced the American Heart Association to promote the new diet based on unproven and selective data. This low-fat diet promoted processed foods laden with polyunsaturated oils, white flour and sugar, and has remained popular for half of a century. However, recent consumer interest in whole raw milk from grass-fed cows - as opposed to the pasteurized and processed low-fat milk - demonstrates the coming shift back to high fat. In 2015, it's time to return to a more traditional whole food and high-fat diet with new dietary guidelines. This lecture further outlines the history of the rise and fall of the low-fat diet.


    Rich Dad, Poor Dad: Defending Your Family's Genetic Wealth - by Catherine Shanahan, M.D.

    Your genes are not written in stone. Recent science suggests that we can control the expression of our genes with the foods we eat, thereby taking greater control over our own health. Food is information, and our genes process this given information the best they can. More recently, the disconnect between our food and nature has altered the information stream with which humans have evolved. When necessary information is not available, the human body cannot grow optimally, contributing to the epidemics of obesity, diabetes, autism and asthma. Raw milk is one of the few remaining pure and unadulterated foods available that contains quality information with the potential to rejuvenate the body using our DNA's deeply engrained intelligence. This lecture further explains our DNA's intelligence and its ability to rehabilitate the body with nutrient-dense food.


    Do the Europeans Do it Better? Dairy Policy and Programs in the EU and Europe: A Way
    Forward Based on Tradition
    - by Sylvia P. Onusic, Ph.D.

    In one of the most shocking talks at the symposium, Dr. Sylvia Onusic, Ph.D., describes the drastic difference in agricultural policies in the European Union and the United States. European subsidies are "green" meaning they preserve farmland, protect the environment, and encourage heritage foods. In contrast, the U.S. subsidies prop up CAFO farming and monocrops of soy, corn, and wheat. Onusic explains how U.S. subsidies negatively affect the balance of trade, whereas, the EU system is respectful of developing nations. Further, Onusic explores EU dairy policy and Common Agriculture Policy (CAP) and the high status of raw milk throughout Europe. Sylvia Onusic, Ph.D. is a nutritionist who became ill by adhering strictly to the dietary advice she learned in her professional training. Now an advocate of traditional foods, the focus of Sylvia's lecture explores, in detail, the international status of raw milk. Slovenia, Austria and Italy have thousands of raw milk machines in public places, each independently owned by local farmers.


    Panel Discussion: Understanding the Nature of Co-operation - Moderator David E. Gumpert with Panelists Michael Schmidt, Pete Kennedy, Esq., Ted Beals, M.S., M.D., Sylvia Onusic Ph.D., Alan Watson, Catherine Shanahan, M.D., Tim Wightman and Greg Schmidt

    At this panel discussion, moderator David Gumpert challenges raw milk producers and consumers to face up to problems associated with food-borne pathogens. He points out that because illnesses associated with raw milk get more attention from public health authorities than do illnesses from other kinds of foods, there is growing pressure to prevent illnesses in the first place. He suggests that the raw milk community get behind efforts to organize producers so as to develop effective safety standards. Panelists take note of the uneven enforcement of food safety regulations as well as the uneven reporting of illnesses, which make it difficult to understand the reality of raw milk problems. Several panelists suggest that more attention be given to educating consumers about how best to evaluate raw milk producers.


    From Consumer to Co-Producer: Understanding the Nature of Co-operation in the Battle Over Food Rights - by Michael Schmidt

    On oversized farms, the rule is to plant, spray and harvest as the life forces disappear. However, on a living farm, the rule is to create complex relationships between the herd, farmer and land. At a time when true stewards of the land are fewer and farther between, children need to experience living farms to plant the seeds as future farmers and supporters. Food is the best medicine, but only when it is in a pure and unadulterated form. This land is our land, and we must grow grassroots support. It will take time to win the battle, but we have a responsibility to the future to recreate the picturesque farm. This keynote speech encourages ongoing support of healthy, educational and aesthetically pleasing farms.
